Serves 4
Ingredients:
1/4 cup of olive oil
1 brown onion finely chopped
4 cloves of garlic finely chopped
100gr diced bacon
100gr finely sliced mushroom
1 x packet of port and veal mince (from Coles or Woolies)
800gr tin of diced tomato
1 tbsp of stock powder
a few basil leaves torn
red wine - optional
grated parmesan to serve
Method:
Heat the oil in a large pan, add the onion and garlic and cook for a few minutes
Add the bacon and mushroom and cook until the mushroom is soft
Add the packet of mince, break down the clumps and cook until brown
Add the tin of diced tomato and stir through the stock powder. Add a dash of wine now if you are using wine
Cook for 1-2 hours (longer if you like) and add water as required to keep it saucy.
add the basil leaves just before serving
Serve on your pasta and top with parmesan. Yum!
