Creamy lemon sauce

  • 1 large lemon (zest the lemon and juice it)

  • 1 large tub of thickened cream

  • 4 tablespoons of butter

  • 1/2 cup of grated parmesan

  • Pinch of ground pepper or pepperberry to serve


  1. If you are using packet pasta, put it on to cook now. If you are cooking fresh pasta, get it on a little later

  2. In a saucepan add lemon zest and cream. Heat over medium heat, whisking often, until liquid is just beginning to simmer, about 2 minutes.

  3. Reduce heat to medium-low. Whisk in butter 1 tablespoon at a time until melted and sauce is creamy and emulsified. Remove from heat.

  4. Add parmesan a bit at a time and whisk in. Add in the lemon juice.

  5. Serve with a pinch of pepper or pepperberry.
