1 large lemon (zest the lemon and juice it)
1 large tub of thickened cream
4 tablespoons of butter
1/2 cup of grated parmesan
Pinch of ground pepper or pepperberry to serve
If you are using packet pasta, put it on to cook now. If you are cooking fresh pasta, get it on a little later
In a saucepan add lemon zest and cream. Heat over medium heat, whisking often, until liquid is just beginning to simmer, about 2 minutes.
Reduce heat to medium-low. Whisk in butter 1 tablespoon at a time until melted and sauce is creamy and emulsified. Remove from heat.
Add parmesan a bit at a time and whisk in. Add in the lemon juice.
Serve with a pinch of pepper or pepperberry.
