4 ingredients, that’s all it takes!
2 punnets of blackberries
1 tbsp of honey
1 cup of water
1 tsp of ferment juice ( I used homemade sauerkraut juice)
1. Put the blackberries into a pot, and cover with water.
2. Simmer for about 30 minutes over low heat, add the honey then allow to cool.
3. Blend the mix, add the fermented juice, pour into a sterilized jar. Put a piece of cheesecloth, or paper towel over the top and secure.
4. Let it sit for about three days on your bench. fermentation happens pretty quickly. Once it has fermented enough for your taste, put a lid on it and put in the fridge.
Serve with soda water and a sprig of mint
