Pickle De Gallo

Serves lots!


  • 1 red capsicum - remove centre

  • 1 green capsicum - remove centre

  • 1 jalapeno - remove stem

  • 1 clove of garlic

  • 2 gerkins of your choice

  • 1 brown onion - peel and quarter

  • 1/2 cup of pickle brine

  • fresh dill - a couple of sprigs

  • A pinch of salt and pepper to taste


  1. Add all of the ingredients into your food processor and use the "chop function".

  2. Or, you can finely dice everything and put it into a bowl and stir in the pickle brine.

  3. Refrigerate for at least an hour.

  4. Serve as a dip, or salsa.
